Ode to The Paneer

Oh, paneer!
So soft and mild
Smooth and white
24×7 revolving in my mind.

Rich and creamy when turned into Butter Masala
“Your Highness” swimming in the ‘royal’ orange lava
Pizza, Paratha or Tikka
Gracing your presence even in the simplest Kofta.

Oh, cheesy paneer,
When popped in gravy, spinach green
That aroma makes my mouth drool
Even if it’s just in Pulao.

Oh, luscious paneer!
Thy divine step in the huge “kadhai”,
Tossed into spicy sauces, to make yummy Chilli,
Peacefully nestled in flavourful “Dum Biriyani”.

Oh, darling fluffy!
Your presence completes the finger-licking curry.
Some say tofu is your sister,
But Ah… her texture is nothing close to yours.
