My only go to dish has to be the local fish thali. There’s no comparison when it comes to authentic Goan thali. Just a simple plate which includes the fish, curry and rice and is accompanied by other side dishes such as kismur, tisreos or khubbe prepared using big/small clams, one or two varieties of vegetables that mostly includes cabbage or ghosali bhaji (ridge gourd). Few restaurants even give crab xacuti as a side dish, sol kadi is the combination of coconut milk and kokum juice which is mostly consumed once the meal is over. The Goan fish thali is an absolute delight for anyone who loves it.

I would have Chicken Hyderabadi Biryani. I love Biryani as it is made with rich and flavourful ingredients such as meat, basmati rice, saffron, precious Indian spices and is garnished with cashew nuts and raisins. It has beautiful colourful appearance, tempting aroma, and mouth watering taste, which makes me crave for biryani. Biryani is altogether a bowl of full meal consisting of carbohydrate, proteins and fibres. It has potential to fulfil all the requirements of a full meal singlehandedly.

I would like to have salad. Many people cringe at the word but it’s something I relish on any given day and time. It’s simple to make and healthy too. And the good thing about preparing salad is that you can use all the vegetables in your refrigerator to create a masterpiece. Also, I feel it allows experimentation with different flavours, textures and colours. A good salad is all that one needs on a gloomy day.

I never came across a single dish concept until I moved to Bengaluru for further studies. The hostel I stayed at offered kuska rice once a week. So if I could have only one dish I would like to have kuska rice because it can be eaten without any gravy or pickle. The rice itself is prepared with masala and vegetables which make it delicious.

I think paneer is one such dairy product that is loved by all. Apart from lavish curries like Paneer do Pyaza, Shahi paneer, Paneer Kurma, etc, there are a number of dishes that can be prepared using paneer as the main ingredient. And one popular paneer dish that is my favourite since childhood is butter paneer. I loved when it is served hot with cheese garlic naan.
