Ice cream consumption in India although growing at healthy rate of 20 per cent per year is no patch on global consumption. India per capita consumption currently is about 550 grams which has improved from 330 grams levels few years ago. Comparatively the US standard per capita standard is hefty 14 kg annually.Most Asian counties like India have low per capita consumption. This is because ice cream is not only considered a luxury and cost is inhibiting to consumers. But also for the fact the villages lack regular power supply. It is one product that requires steady power with no voltage fluctuations.
The temperature during production and also for storage has to be just right. A small change in temperature can change the taste of the product and make entire production go waste.
