There is no food like Indian food! Well, this superlative phrase could certainly be an understatement if one considers the variety of food available across the country, and looks attentively at the fact that Indian recipes of diverse taste can serve you a new dish every day, for years together. Indian food, which is a fusion of many influences right from Mughal to Parsi kitchens and more, provides everything that a connoisseur of food could wish for.
As a tribute to the great country that India is and its culinary diversity, annually, Goa Marriott Resort and Spa organises the Incredible India Festival, coinciding with Independence Day. In its third successive year, this popular food event is being organised by the resort at its Waterfront Terrace and Bar, from August 7 to August 15.
Sous Chef Manish, handling the Indian food fiesta, informs that this year the Incredible India Festival will offer food from a number of states, from Rajasthan to Uttar Pradesh, Punjab to Maharashtra and Tamil Nadu to Goa; each day being reserved for one state. “In general, we will be serving home-styled food items”, he states, adding that the festival venue will sport a perfect Bharatiya ambiance, with three live counters each day serving food items pertaining to a particular state. The culinary treasures of India will open up with a welcome a drink linked to the state of the day, ranging from Punjabi lassi to Goan kokum sherbet to Awadhi jal-jeera.
The dishes for starters as well as the main course will allow visitors to dig into tandoori temptations of North India, relish the bountiful vegetarian repast of the South, and feast on desserts to one’s heart’s content. Savouring the aromatic curries of the Western region, and sampling the delicate flavours of the East will also be a part of this culinary extravaganza. The week-long magnificent dinner buffet will culminate in the grand Independence Day brunch on August 15.
Specialty dishes include gosht rogan josh – the signature Kashmiri delicacy, and the traditional Punjabi sarson da saag. One could also feast on the scrumptious dahi pudiney ke kebab and khoya khubani ke koftey, in addition to tasting a bit of Bengali khadya with sarson bata maach accompanied by the delicious Amritsari kulcha or the crisp khasta roti. Maas ki galouti, kozhi vepudu, mushroom ressois, tikki chole, taar korma, achari murgh, amchoori bhindi, jeera mattar pyaz ka pulao…The menu is endless!
Meals can be concluded with desserts like the irresistible gulab ki kheer, South-inspired pal payasam, ras malai terrine, gulab jamun tart, shahi tukda and even a rare delicacy Chandrakala.
A unique chance to experience the imperial flavours of the great nation’s varied cuisine during the week preceding its Independence Day, the Incredible India Festival offers a glorious gastronomical journey, which is bound to treat the visitors to the exquisitely delicious fare from the different regions of India.
