As a part of the three year BSc in International Hospitality Management training program, the first year students of V M Salgaocar Institute of International Hospitality Education (VMSIIHE) organised two banquets recently on its campus in Raia. The international style mock banquets were modeled along the lines of a United Nations and Academy award style. A mock banquet creates an opportunity for the students to practice the knowledge gained in a real setting with specially invited guests.
Guests were welcomed and escorted by the service team to their respective tables previously reserved for them. The guests and the hosts gave speeches, just as in a real event setup.
The banquet was a synchronised service wherein all the guests were served at the same time. From the first course till the last course, the students displayed a well thought out and organised service that ensured a smooth flow of operations.
A closer observation of the students movements would allow one to observe how only at the signal of the head waiter at the head table, would other waiters commence with their service in order to ensure the same movements took place simultaneously.
As a part of the curriculum, students had to do all the preparation for the banquet starting from invitation cards to creating name tags, menu cards, table setting, flower arrangements, food production and other details.
The students found that the theme banquet was a great learning experience as they learnt to handle all the finer details of putting an event together by themselves, from handling the budgeting, marketing, event planning, sponsorships all the way down to the service. The students got practical exposure which builds up their confidence, team spirit and the F&B service together with the food production skills.
