Breakfast Mango Parfait
Ingredients:
Mango (large)- 1 no, mango yoghurt- 200gms, fresh cream- 100 gms, honey – 6 tbsp, Swiss muesli- 6 tbsp
Method:
Put the cream and mango yoghurt in a bowl. Add 2 tbsp of honey and whisk till fluffy. Peel and chop up the mango into small pieces. To assemble, put in one tablespoon of muesli in a margarita/martini glass. Top with some mango and 1 tbsp of honey. Add about 3 tbsp of the yoghurt cream mixture. Layer once again with muesli, honey and mango, finishing with the yoghurt. Set aside for 20 min in the refrigerator. Finish with a little muesli and a big tbsp of chopped mango and serve chilled.
