Hunan Style Spinach Tofu Soup

Ingredients:

Spinach 500gms, silken tofu 200 gms, scallions 2 nos, sesame oil 1 tbsp, salt for seasoning, pepper for seasoning, vegetable stock 1 litre

Method:

Thinly slice onions and set aside. Drain off and cut into ½ inch cubes. Take a pan and then add stock and mix with scallion slices and shredded spinach. Cook over medium heat in order to extract the flavour of the onions and scallions. Bring to boil for 10 minutes and add Tofu. Allow to cook for another 2 minutes. Remove from heat. Add sesame oil and seasoning.
